Ingredients

The following ingredients have 4 Servings
  • 8 ounces orzo (cooked and cooled)
  • 1 cup cherry tomatoes
  • 1 bell pepper (chopped)
  • 1/2 cup mini cucumbers (chopped)
  • 1/4 cup red onion (diced)
  • 1/2 cup feta cheese
  • 1 (15 ounce) can garbanzo beans (chickpeas), drained and rinsed
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 2 tablespoons lemon
  • 2 teaspoons honey
  • black pepper and salt to taste

Instruction

  • Cook orzo according to directions. Rinse with cold water.
  • Combine all dressing ingredients in a small bowl, whisk until well combined.
  • In a large bowl combine remaining ingredients (orzo, tomatoes, pepper, cucumbers, red onion, feta cheese and garbanzo beans.
  • Toss salad with dressing.
  • Refrigerate until ready to serve.
