Ingredients

The following ingredients have 5 Servings
  • 4 cups unsweetened almond milk
  • 1 large English cucumber, chopped
  • 1 tablespoon salt
  • 1 teaspoon white pepper
  • Juice of 3 or 4 lemons
  • 3/4 cup minced fresh dill
  • 1/2 of an English cucumber cut in a fine dice
  • 1/4 cup grated onion
  • 1 grated garlic clove
  • 1/8 teaspoon cayenne pepper
  • 1/2 cup ground almonds
  • Salt for re-seasoning

Instruction

  • In a blender puree the milk, chopped cucumber, salt, white pepper, lemon juice and dill. ( I did this in two batches)
  • Pour the mixture into a large bowl and stir in the grated onion, grated garlic, finely diced cucumber, ground almonds and cayenne.
  • Chill for a few hours before serving. Re- season with salt if desired.
