Ingredients
The following ingredients have 5 Servings
- 4 cups unsweetened almond milk
- 1 large English cucumber, chopped
- 1 tablespoon salt
- 1 teaspoon white pepper
- Juice of 3 or 4 lemons
- 3/4 cup minced fresh dill
- 1/2 of an English cucumber cut in a fine dice
- 1/4 cup grated onion
- 1 grated garlic clove
- 1/8 teaspoon cayenne pepper
- 1/2 cup ground almonds
- Salt for re-seasoning
Instruction
- In a blender puree the milk, chopped cucumber, salt, white pepper, lemon juice and dill. ( I did this in two batches)
- Pour the mixture into a large bowl and stir in the grated onion, grated garlic, finely diced cucumber, ground almonds and cayenne.
- Chill for a few hours before serving. Re- season with salt if desired.
