Ingredients

The following ingredients have 4 Servings
  • 2 cups Strawberries (-diced)
  • 1 1/2 cups Sugar Alternative (-see post for details and alternatives.)
  • 3 cups Flour
  • 1 tbsp Baking Powder
  • 1/2 tsp Baking Soda
  • 2 tbsp Ground Cinnamon
  • 1 1/3 cup Milk (- see postfor details and alternative.)
  • 2 Eggs (- large, beaten)
  • 1 cup Butter (-melted, 2 sticks)

Instruction

  • Preheat your oven to 350 and prep your muffin pans for nonstick. Muffin/cupcake liners work well in this recipe.
  • Place the strawberries in a bowl and sprinkle the sugar alternative on top.
  • In a large mixing bowl, sift or use a whisk to mix together the flour, baking powder, baking soda, and the ground cinnamon.
  • To add the wet ingredients from the medium bowl to the dry ingredients in the mixing bowl, first make a well and then pour the wet ingredients into the well.
  • Mix the ingredients in the mixing bowl until just combined.
  • Use a spatula to gently fold the strawberries with sugar alternative into the muffin batter.
  • Bake these muffins for 25-30 minutes or until the tops begin to brown.
