Ingredients
The following ingredients have 4 Servings
- 2 cups Strawberries (-diced)
- 1 1/2 cups Sugar Alternative (-see post for details and alternatives.)
- 3 cups Flour
- 1 tbsp Baking Powder
- 1/2 tsp Baking Soda
- 2 tbsp Ground Cinnamon
- 1 1/3 cup Milk (- see postfor details and alternative.)
- 2 Eggs (- large, beaten)
- 1 cup Butter (-melted, 2 sticks)
Instruction
- Preheat your oven to 350 and prep your muffin pans for nonstick. Muffin/cupcake liners work well in this recipe.
- Place the strawberries in a bowl and sprinkle the sugar alternative on top.
- In a large mixing bowl, sift or use a whisk to mix together the flour, baking powder, baking soda, and the ground cinnamon.
- To add the wet ingredients from the medium bowl to the dry ingredients in the mixing bowl, first make a well and then pour the wet ingredients into the well.
- Mix the ingredients in the mixing bowl until just combined.
- Use a spatula to gently fold the strawberries with sugar alternative into the muffin batter.
- Bake these muffins for 25-30 minutes or until the tops begin to brown.
