The following ingredients have 4 Servings
  • 2 1/2 cups carrots (finely grated)
  • 2 cups oat flour (gluten-free if needed)
  • 1 cup small soft dates (pitted (see notes))
  • 1/2 cup shredded unsweetened coconut
  • 1/4 cup walnuts (or other nuts/seeds of choice)
  • 1 tsp cinnamon
  • 1 tsp fresh ginger (grated)
  • 1/4 tsp allspice
  • 1 Pinch of salt
  • 1 cup coconut milk (canned)
  • 2 1/2 tbsp cornstarch (or arrowroot flour)
  • 2 tbsp Erythritol (or sweetener of choice (see notes))
  • Vanilla powder (to taste)
  • 1 cup cashews
  • 3-4 tbsp maple syrup (or any other liquid sweetener)
  • 3 tbsp coconut oil (melted)
