The following ingredients have 4 Servings
- 2 1/2 cups carrots (finely grated)
- 2 cups oat flour (gluten-free if needed)
- 1 cup small soft dates (pitted (see notes))
- 1/2 cup shredded unsweetened coconut
- 1/4 cup walnuts (or other nuts/seeds of choice)
- 1 tsp cinnamon
- 1 tsp fresh ginger (grated)
- 1/4 tsp allspice
- 1 Pinch of salt
- 1 cup coconut milk (canned)
- 2 1/2 tbsp cornstarch (or arrowroot flour)
- 2 tbsp Erythritol (or sweetener of choice (see notes))
- Vanilla powder (to taste)
- 1 cup cashews
- 3-4 tbsp maple syrup (or any other liquid sweetener)
- 3 tbsp coconut oil (melted)
