Ingredients

The following ingredients have 4 Servings
  • 1 1/2 cups Flour (- see post for alternatives)
  • 1 tsp Baking Soda
  • 1/2 cup Splenda (- see post for alternatives)
  • 3 Bananas (- mashed, around 1 1/4-1/3 cups)
  • 1/2 cup Butter (-melted)
  • 1 tsp Vanilla Extract
  • 2 tbsp Milk
  • 1 Egg
  • 3/4 cup Sugar Free Chocolate Chips

Instruction

  • Preheat your oven to 350 and prep your muffin pans for nonstick.
  • In a medium bowl, whisk together your flour and baking soda.
  • Next, in a mixing bowl blend together the sugar alternative, bananas, and butter.
  • For the next step we will add everything else but the chocolate chips. The flour mixture from the first step will be added half at a time. Do this by stirring in the first half of the flour mixture. Stir gently and then add the vanilla extract, milk, and the egg with the second half of the flour. Mix until just blended and then fold in the chocolate chips.
  • Bake for 18-20 minutes or until your muffins begin to brown. You could do the toothpick test however, keep in mind that the melting chocolate chips may give a false result. Allow your muffins to cool before serving.
