Ingredients

The following ingredients have 4 Servings
  • 2 tablespoons olive oil
  • 1-2 cloves garlic minced
  • ½ medium onion finely chopped (optional)
  • ½ medium carrot chopped small
  • ½ medium celery stalk chopped small
  • 2½ cups tomato puree (passata)
  • 1-1½ cups water
  • ½ teaspoon salt
  • ½-1 teaspoon basil ground or 4-5 fresh basil leaves chopped
  • ½-1 teaspoon oregano ground
  • 24 large pasta shells
  • 1 cup ricotta (if ricotta is watery drain in a sieve for about 30-60 minutes)
  • 4½-5 cups fresh spinach (½ cup cooked)
  • ¼ cup + 2 tablespoons freshly grated parmesan cheese ((40 grams total))
  • 1 large egg
  • 1 pinch salt
  • 1 pinch nutmeg (optional)
  • 2-3 tablespoons freshly grated Parmesan cheese or mozzarella if preferred
