Ingredients
The following ingredients have 4 Servings
- 2 tablespoons olive oil
- 1-2 cloves garlic minced
- ½ medium onion finely chopped (optional)
- ½ medium carrot chopped small
- ½ medium celery stalk chopped small
- 2½ cups tomato puree (passata)
- 1-1½ cups water
- ½ teaspoon salt
- ½-1 teaspoon basil ground or 4-5 fresh basil leaves chopped
- ½-1 teaspoon oregano ground
- 24 large pasta shells
- 1 cup ricotta (if ricotta is watery drain in a sieve for about 30-60 minutes)
- 4½-5 cups fresh spinach (½ cup cooked)
- ¼ cup + 2 tablespoons freshly grated parmesan cheese ((40 grams total))
- 1 large egg
- 1 pinch salt
- 1 pinch nutmeg (optional)
- 2-3 tablespoons freshly grated Parmesan cheese or mozzarella if preferred
