Ingredients

The following ingredients have 2 Servings
  • 2 large eggs, (room temperature)
  • ½ cup milk
  • 1 teaspoon cinnamon
  • 4 ounces cream cheese, (softened)
  • 2 tablespoons confectioners' sugar
  • 2 tablespoons strawberry jam
  • 8 fresh strawberries, (rinsed, hulled, and thinly sliced)
  • 8 slices Texas toast, (lightly toasted in toaster)
  • 3 tablespoons butter
  • confectioners' sugar, (for dusting)
  • whipped topping, (for topping (optional))

Instruction

  • In a medium bowl whisk together the eggs, milk, and cinnamon. Set aside.
  • In a separate medium bowl, combine cream cheese, confectioners' sugar, and strawberry jam. Mix well until creamy.
  • Spread the cream cheese mixture evenly over 8 slices of lightly toasted bread.
  • Top 4 slices of toast with strawberries, and then place the remaining slices of toast on top, cream cheese side down.
  • Heat a large skillet over medium heat. Add butter.
  • While the butter is melting, dip the sandwiches in the egg mixture, carefully coating both sides.
  • Add the sandwiches to the skillet and cook for 3-4 minutes, or until golden brown. Flip and cook an additional 3-4 minutes.
  • Dust with confectioners' sugar and top with whipped topping. Serve immediately.
