Ingredients

The following ingredients have 4 Servings
  • 2/3 cups tricolor quinoa (rinsed & drained)
  • 1 1/3 cups water
  • 1 cup sliced strawberries
  • 3 tablespoons slivered almonds
  • 2 green onions (thinly sliced)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons agave nectar (or honey)
  • 1/4 teaspoon salt

Instruction

  • Combine the quinoa and water in a medium saucepan set over high heat. Bring to a boil, cover and reduce the heat to low. Cook until all of the water is absorbed, 18 to 20 minutes. Spread the quinoa on a baking sheet and let cool.
  • In a serving bowl, combine the cooled quinoa, strawberries, almonds and green onions.
  • Toss with the dressing. Serve.
