Ingredients
The following ingredients have 4 Servings
- 2/3 cups tricolor quinoa (rinsed & drained)
- 1 1/3 cups water
- 1 cup sliced strawberries
- 3 tablespoons slivered almonds
- 2 green onions (thinly sliced)
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra-virgin olive oil
- 2 teaspoons agave nectar (or honey)
- 1/4 teaspoon salt
Instruction
- Combine the quinoa and water in a medium saucepan set over high heat. Bring to a boil, cover and reduce the heat to low. Cook until all of the water is absorbed, 18 to 20 minutes. Spread the quinoa on a baking sheet and let cool.
- In a serving bowl, combine the cooled quinoa, strawberries, almonds and green onions.
- Toss with the dressing. Serve.
