Ingredients

The following ingredients have 4 Servings
  • 5 ozs dried Spiral pasta
  • 1 cup Strawberries (hulled)
  • 1 Tbsp olive oil
  • 2 tsps lemon juice
  • 0.5 cup Feta (crumbled)
  • 20 mint (torn)

Instruction

  • Bring a large pan of salted water to the boil and add the pasta. Cook according to the packet instructions, for about 10 minutes until al dente, tender yet still with a slight bite.
  • Cut the hulled strawberries into quarters.
  • Drain the pasta and run under cold water. Put into 4 bowls.
  • Pour over the olive oil and lemon juice and mix together.
  • Crumble over the cheese, scatter over the strawberries and mint leaves and serve within a couple of hours.
