Ingredients
The following ingredients have 4 Servings
- 5 ozs dried Spiral pasta
- 1 cup Strawberries (hulled)
- 1 Tbsp olive oil
- 2 tsps lemon juice
- 0.5 cup Feta (crumbled)
- 20 mint (torn)
Instruction
- Bring a large pan of salted water to the boil and add the pasta. Cook according to the packet instructions, for about 10 minutes until al dente, tender yet still with a slight bite.
- Cut the hulled strawberries into quarters.
- Drain the pasta and run under cold water. Put into 4 bowls.
- Pour over the olive oil and lemon juice and mix together.
- Crumble over the cheese, scatter over the strawberries and mint leaves and serve within a couple of hours.
