Ingredients

The following ingredients have 4 Servings
  • 2 ½ cups fresh strawberries
  • ½ cup fresh blueberries
  • 1 
 teaspoon lemon juice
  • ½ teaspoon corn starch
  • 1 tablespoon granulated sugar
  • 1 1/2
 cups all-purpose flour ((6.75 ounces))
  • 1 1/4
 cups rolled oats
  • 1/3 cup 
granulated sugar
  • 1/3
 cup dark brown sugar (packed)
  • 2 tablespoons candied ginger
  • 1 
 teaspoon kosher salt
  • 1/2 
 teaspoon baking soda
  • 8 tablespoons unsalted butter

Instruction

  • Heat the oven to 350° F, and line the bottom of an 8” X8” baking pan with foil, with the ends falling over sides of the baking dish.
  • Prep the strawberries. Slice the strawberries. Combine them with the blueberries, lemon juice, corn starch, and 1 tablespoon sugar in a medium bowl. Set it aside.
  • Stir together the dry ingredients. Using a sharp chef's knife, cut the candied ginger pieces into the smallest pieces you can. In a separate large bowl, whisk together the flour, oats, remaining granulated sugar, brown sugar, ginger pieces, salt, and baking soda.
  • Make a batter. Melt the butter and stir it into the dry ingredients. I use the microwave oven to melt the butter super quick. You'll have around 3 cups of a very thick batter.
  • Get ready to bake. Press 2 cups of the oat mixture in an even layer on the bottom of the prepared baking pan. Spread the berry mixture evenly across the crust, then sprinkle evenly with the remaining buttery oat mixture.
  • Bake: Bake for about 35 - 40 minutes in a 350˚F oven until the top is golden brown and the berries are bubbling up around the edges.
  • Cool, cut and serve. Move the baking dish to a cooling rack and let the oatmeal bars cool completely before removing. To remove the oatmeal bars from the dish, just lift the foil edges up. Remove the foil, and cut the strawberry oatmeal bars into 2-inch squares and serve.
  • Store. Oatmeal bars can be kept in an airtight container on the counter for two to three days. Or keep them in the refrigerator for up to 1 week.If you refrigerate them, I recommend you warm them in the microwave oven before eating.
