Ingredients

The following ingredients have 20 Servings
  • 3 cups all-purpose flour (or gluten free mix *see notes*)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 cups sugar
  • 1 Cup Strawberries (Diced )
  • 1 Cup Kiwi Fruit (peeled & diced)
  • 4 eggs (well-beaten)
  • 1 1/4 cups vegetable oil

Instruction

  • Preheat oven to 350 degrees F.
  • Line 2 Cupcake pans with cupcake liners
  • Combine dry ingredients.
  • Make a well in the center.
  • Put strawberries, kiwi, eggs, and oil in the well.
  • Mix thoroughly into a nice batter.
  • Fill each Cupcake cup 2/3 of the way full
  • Bake 20-22 minutes at 350 degrees F or until a toothpick inserted in center comes out clean.
  • Cool and serve.
