Ingredients

The following ingredients have 9 Servings
  • 7 oz Graham crackers (or digestive biscuits)
  • 4 tbsp Unsalted butter (melted)
  • 1 tbsp Sugar (optional)
  • 8 oz Cream cheese (35 to 40% - Mascarpone or Philadelphia )
  • 1/2 cup Sour cream
  • 1/2 cup Heavy cream
  • 1/2 cup Granulated sugar
  • 4 tbsp All purpose flour
  • 3 Eggs (large)
  • 1 ½ tbsp Lemon juice
  • 2 tsp Vanilla extract
  • 8 Strawberries (chopped)
  • 10 oz Strawberries
  • ½ cup Granulated sugar
  • 1 tbsp Gelatin (powder)
  • 3 tbsp Water

Instruction

  • Pre-heat the oven at 350°F / 177°C/ Gas Mark 3
  • Prepare pan - Wrap the outside of a 7-inch springform pan in aluminum foil. We will also need a roasting rack larger than the springform pan. Pro tip - the aluminum foil will prevent water from entering the cheesecake while baking in a water bath.
