Ingredients

The following ingredients have 4 Servings
  • 1 cup gluten-free flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 2/3 cup melted coconut oil
  • 1/2 cup pure maple syrup
  • 1 small ripe banana (mashed)
  • 1 tsp vanilla extract
  • 2 cups rolled oats
  • 3/4 cup unsweetened shredded coconut
  • 1 cup diced walnuts (or other nuts/seeds)
  • 8 oz finely chopped fresh strawberries ((1 1/4 cups))

Instruction

  • Grease a 9 x 13 inch pan and preheat the oven to 350 degrees.
  • In a small bowl, combine the flour, baking powder, and salt.
  • In a large bowl, mix together the egg, melted coconut oil, maple syrup, banana, and vanilla. Stir in the flour mixture until combined.
  • Add the oats, coconut, and walnuts, and stir to combine. Then stir in the strawberries.
  • Press the dough evenly into the 9 x 13 inch pan. Bake on the center rack in the oven for 20 to 25 minutes, until the edges are beginning to get brown.
  • Cool completely on a wire rack and cut into 14 bars. If you try to cut them before they’re completely cool, they’ll likely crumble apart. Store the bars in an airtight container for several days, or freeze them for several months.
