Ingredients

The following ingredients have 4 Servings
  • 1 cup quinoa (dry)
  • 2 cups water
  • 2 cups sliced strawberries
  • 1/4-1/2 cup crumbled goat cheese (however much you like)
  • 1 Tbs fresh basil (chopped)
  • 2-3 Tbs honey
  • 1 Tbs olive oil

Instruction

  • In a small pot, bring quinoa and water to a boil. Reduce heat to low, cover, and let simmer for about 15 minutes or until the water is absorbed. Fluff with fork, and remove from heat. Refrigerate to cool (I only did this for about 15 minutes)
  • In a large bowl mix together quinoa, sliced strawberries, goat cheese, and basil.
  • In small bowl, mix honey and olive oil with a fork, then drizzle over quinoa mixture and toss.
  • Serve cold or at room temperature.
