Ingredients

The following ingredients have 4 Servings
  • 8 oz cream cheese (softened)
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 8 oz Whipped Topping (or whipped cream)
  • 2 TBSP hot water
  • 2 tsp unflavored gelatin
  • 1/2 cup pureed strawberries
  • 1 sleeve graham crackers (crushed)

Instruction

  • Combine cream cheese and sugar and mix until smooth.
  • Add in vanilla and whipped topping and mix until combined.
  • Combine the hot water with the gelatin and stir gently. Microwave for 15 seconds and stir once more. Add into the cream cheese mixture and mix once more.
  • Add in pureed strawberries and stir to combine.
  • Transfer mixture into a pan and refrigerate until firm. (At least 3-4 hours)
  • Scoop rounded tablespoonfuls of the strawberry cheesecake mixture and shape into balls. Roll in graham cracker crumbs and set on a tray. This is a messy process, but I find it’s easier to roll them all into balls first, quick chill in the freezer for 20 minutes, then coat them all in cracker crumbs.
  • Chill cheesecake balls until serving. Drizzle with hot fudge if desired.
