Ingredients
The following ingredients have 6 Servings
- 1 cup bulgur wheat
- 1/2 pound strawberries, hulled and sliced
- 3 green onions, thinly sliced
- 1 English cucumber, chopped
- 1/2 cup crumbled feta cheese
- 1/2 cup shelled, roasted and salted pistachios
- 2 tablespoons chopped fresh basil
- 3 tablespoons lemon juice
- 1 tablespoon whole grain mustard
- 1/4 teaspoon fine sea salt
Instruction
- Put bulgur in a large heatproof bowl.
- Pour 1 1/2 cups boiling water over the top, cover and let sit until tender, about 30 minutes.
- Drain well and return to bowl to cool.
- Add strawberries, green onions, cucumber, cheese, pistachios and basil to the bowl and toss gently to combine.
- In a small bowl, whisk together lemon juice, mustard and salt
- Drizzle over salad and toss to combine. Serve immediately, or refrigerate in an airtight container until ready to serve or up to 3 days.
