Ingredients

The following ingredients have 6 Servings
  • 1 cup bulgur wheat
  • 1/2 pound strawberries, hulled and sliced
  • 3 green onions, thinly sliced
  • 1 English cucumber, chopped
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shelled, roasted and salted pistachios
  • 2 tablespoons chopped fresh basil
  • 3 tablespoons lemon juice
  • 1 tablespoon whole grain mustard
  • 1/4 teaspoon fine sea salt

Instruction

  • Put bulgur in a large heatproof bowl.
  • Pour 1 1/2 cups boiling water over the top, cover and let sit until tender, about 30 minutes.
  • Drain well and return to bowl to cool.
  • Add strawberries, green onions, cucumber, cheese, pistachios and basil to the bowl and toss gently to combine.
  • In a small bowl, whisk together lemon juice, mustard and salt
  • Drizzle over salad and toss to combine. Serve immediately, or refrigerate in an airtight container until ready to serve or up to 3 days.
