Ingredients
The following ingredients have 6 Servings
- 1 3/4 cup gluten-free oats (divided)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon coconut sugar (optional)
- 1 1/4 cup plant-based milk of choice
- 1 large banana
- 1 large egg
- 1/2 cup cooked quinoa
- 1 cup chopped strawberries + more garnishing
Instruction
- Add 1 1/2 of oats into a blender and blend on high until fine and powdery. Pulse in baking powder, salt and sugar if using.
- Add milk, banana and egg. Blend on high until smooth.
- Pour batter into a mixing bowl and fold in quinoa, remaining oats and strawberries.
- Preheat the waffle iron to medium-high heat. Grease with nonstick spray (or coconut oil) and scoop 1/4 - 1/3 cup of batter onto the iron. Cook until waffle maker indicates they're done.
- Transfer to a wire rack and repeat until no batter remains.
- Serve with additional chopped strawberries and warm maple syrup. Enjoy!
