Ingredients
The following ingredients have 12 Servings
- 1 1/4 cups plain flour
- 1 tsp bicarb soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 120g chopped walnuts
- 1 cup brown sugar
- 2 eggs
- 1/2 cup olive oil
- 3 ripe bananas
- 1 1/2 tsp vanilla essence
- 220g pitted dates chopped
Instruction
- Preheat oven 180C and line a tin with baking paper.
- In a bowl, sift together flour, bicarb, cinnamon and salt.
- In a separate bowl, add eggs, sugar, oil and whisk for 1 minute.
- Add mashed bananas, 1/2 the walnuts, vanilla and chopped dates. Whisk together for another minute.
- Add the dry ingredients to form a sloppy batter. Pour into the prepared tin and top with remaining walnuts.
- Bake on middle shelf for around 1 hour and 10 minutes. Test before taking out of oven. Cover with a clean tea towel when it comes out of oven and allow to cool.
