Ingredients

The following ingredients have 12 Servings
  • 1 1/4 cups plain flour
  • 1 tsp bicarb soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 120g chopped walnuts
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 cup olive oil
  • 3 ripe bananas
  • 1 1/2 tsp vanilla essence
  • 220g pitted dates chopped

Instruction

  • Preheat oven 180C and line a tin with baking paper.
  • In a bowl, sift together flour, bicarb, cinnamon and salt.
  • In a separate bowl, add eggs, sugar, oil and whisk for 1 minute.
  • Add mashed bananas, 1/2 the walnuts, vanilla and chopped dates. Whisk together for another minute.
  • Add the dry ingredients to form a sloppy batter. Pour into the prepared tin and top with remaining walnuts.
  • Bake on middle shelf for around 1 hour and 10 minutes. Test before taking out of oven. Cover with a clean tea towel when it comes out of oven and allow to cool.
