Ingredients

The following ingredients have 5 Servings
  • 1 tablespoon(s) bacon grease or butter
  • 1 large onion, diced
  • 2 stalk(s) celery, chopped
  • 1 medium bell pepper, chopped
  • 4 cup(s) peeled diced tomatoes
  • 1 pound(s) cut okra
  • 1 can(s) 10 oz v-8 juice
  • 1 - bay leaf
  • 2 teaspoon(s) dried basil
  • 2 teaspoon(s) dried parsley
  • 2 cup(s) whole kernel corn
  • 1 - link smoked sausage, or 1/2 pound tasso or boiled shrimp (optional)
  • - salt, pepper, cajun seasoning to taste

Instruction

  • In large saucepan melt bacon grease and saute onion, celery, and bell pepper for about 5 minutes.
  • Add tomatoes, okra and V-8, bay leaf, basil and parsley. Simmer on low, covered, for at least 30 minutes, stirring occasionally.
  • Meanwhile, if using sausage or tasso, fry it off in a skillet to render some of the fat. Let drain on paper towel lined plate.
  • Add corn, and seasonings to taste. Simmer until okra is very tender and beginning to fall apart. Add optional meat and cook an another 10 minutes until heated through.
