Ingredients
The following ingredients have 4 Servings
- 12 (approximately) small red potatoes
- 1 1/2 teaspoons salt ((divided))
- 8 ounces cooked steak strips ((use Certified Angus Beef® Brand for best results!))
- 2 tablespoons vinegar
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup fresh dill ((chopped))
- 1 cup reduced-fat feta
Instruction
- Place the potatoes in a large pot. Add 1 teaspoon of salt and cover potatoes with cool water.
- Bring the water to a boil, reduce the heat and simmer about 15 minutes, until the potatoes are tender. Drain and run under cool water.
- When the potatoes have cooled, cut them into chunks and place in a large bowl.
- Cut the steak strips into bite-sized chunks if needed and add to the bowl with the potatoes.
- In a small bowl, whisk together the vinegar, olive oil, the remaining 1/2 teaspoon salt, and pepper. Stir in the dill.
- Pour the vinegar/olive oil/dill mixture over the steak and potatoes and stir to coat. Add the feta and mix it in gently.
