Ingredients

The following ingredients have 8 Servings
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar (I used a little over ¾ cup, for sugar-free option use Lakanto Monkfruit Baking Sugar)
  • 1 cup sour cream or Greek yogurt (I used Greek yogurt)
  • 1/2 cup oil - I used canola (vegetable or grapeseed are good choices as well)
  • 2 tbsp lemon zest
  • 2 tbsp pure lemon extract (I used Nielsen-Massey)
  • ¾ cup to 1 cup confectioners' sugar (or for sugar-free option, use Lakanto's Monkfruit Powdered Sugar)
  • 2 or 3 tablespoons lemon juice
