Ingredients

The following ingredients have 6 Servings
  • 1 1/2 cup oats
  • 4 cups fresh spinach (100g)
  • 1 1/2 cup cottage cheese
  • 6 eggs
  • 1 1/2 tsp baking soda
  • 1 TBSP chia seeds
  • 1 TBSP vanilla extract
  • maple syrup & butter for serving

Instruction

  • Add the oats and spinach to a food processor or blender, and blend for about 20 seconds.
  • Add the remaining ingredients (cottage cheese, eggs, baking soda, chia seeds, and vanilla extract) to the food processor, and blend until smooth. Let sit for about 5 minutes.
  • Meanwhile, heat a griddle or skillet to medium meat. Add about 1/2 cup batter for each pancake to the preheated griddle/skillet, and cook for about 3-4 minutes until bubbles form on the top. Flip and cook another 2-3 minutes until done. Repeat with remaining batter. (Recipe makes 12 pancakes)
  • Serve with maple syrup and butter if desired.
