Ingredients
The following ingredients have 4 Servings
- 1 tbs ghee
- 1 tbs vegetable oil
- 2 onions finely chopped
- 2 tbs fresh curry leaves
- 2 garlic cloves crushed
- 2 tsp ginger grated
- 1 fresh green chilli finely chopped
- 2 tbs curry powder
- 600 g chicken breast fillet cut into pieces
- 400 g canned chopped tomato
- 1 cup water
- 1 cup coconut milk
- 1/2 cup coriander *to serve
Instruction
- Heat ghee or butter and oil in large saucepan.
- Add onion, chillies and curry leaves, saute until onions are translucent.
- Stir in ginger and curry powder, cook for approximately 30 seconds.
- Add chicken, stir to coat all pieces with spice mixture.
- Add tomato pieces and water, bring to a boil. Decrease heat and simmer, covered, for approximately 1 hour or until chicken is tender.
- Combine coconut milk and heat through.
- Garnish with coriander and serve with rice and naan bread.
