Ingredients

The following ingredients have 4 Servings
  • 1 tbs ghee
  • 1 tbs vegetable oil
  • 2 onions finely chopped
  • 2 tbs fresh curry leaves
  • 2 garlic cloves crushed
  • 2 tsp ginger grated
  • 1 fresh green chilli finely chopped
  • 2 tbs curry powder
  • 600 g chicken breast fillet cut into pieces
  • 400 g canned chopped tomato
  • 1 cup water
  • 1 cup coconut milk
  • 1/2 cup coriander *to serve

Instruction

  • Heat ghee or butter and oil in large saucepan.
  • Add onion, chillies and curry leaves, saute until onions are translucent.
  • Stir in ginger and curry powder, cook for approximately 30 seconds.
  • Add chicken, stir to coat all pieces with spice mixture.
  • Add tomato pieces and water, bring to a boil. Decrease heat and simmer, covered, for approximately 1 hour or until chicken is tender.
  • Combine coconut milk and heat through.
  • Garnish with coriander and serve with rice and naan bread.
