Ingredients

The following ingredients have 3 Servings
  • 1 small garlic clove, minced
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp fresh parsley, chopped (other fresh herbs such as basil can be used)
  • 1 tsp mustard
  • salt & pepper to taste
  • 5 cups baby spinach
  • ¼ cup yellow or red bell peppers, chopped into bite sized pieces.
  • 12 grape tomatoes
  • 1 tbsp feta cheese
  • 3 tbsp pumpkin seeds, toasted

Instruction

  • Make the vinaigrette: add the ingredients, garlic clove through the mustard, to a small bowl.
  • Whisk the vinaigrette ingredients together so they are well combined. Add salt and pepper to taste, and whisk again. Set the vinaigrette aside.
  • Place the spinach in a large salad bowl.
  • Add the peppers, tomatoes and feta cheese to the spinach.
  • Pour most of the vinaigrette into the salad, leaving about a tablespoon in the bowl. Toss the salad with the vinaigrette until the spinach leaves are well coated with the dressing, and the ingredients are evenly distributed.
  • Sprinkle the pumpkin seeds on top of the salad, and you are ready to serve and enjoy!
