Ingredients
The following ingredients have 3 Servings
- 1 small garlic clove, minced
- 3 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 tsp fresh parsley, chopped (other fresh herbs such as basil can be used)
- 1 tsp mustard
- salt & pepper to taste
- 5 cups baby spinach
- ¼ cup yellow or red bell peppers, chopped into bite sized pieces.
- 12 grape tomatoes
- 1 tbsp feta cheese
- 3 tbsp pumpkin seeds, toasted
Instruction
- Make the vinaigrette: add the ingredients, garlic clove through the mustard, to a small bowl.
- Whisk the vinaigrette ingredients together so they are well combined. Add salt and pepper to taste, and whisk again. Set the vinaigrette aside.
- Place the spinach in a large salad bowl.
- Add the peppers, tomatoes and feta cheese to the spinach.
- Pour most of the vinaigrette into the salad, leaving about a tablespoon in the bowl. Toss the salad with the vinaigrette until the spinach leaves are well coated with the dressing, and the ingredients are evenly distributed.
- Sprinkle the pumpkin seeds on top of the salad, and you are ready to serve and enjoy!
