Ingredients
The following ingredients have 4 Servings
- 1 cup of quinoa (cooked per package)
- 2 TBSP of coconut oil or olive oil
- 4 cloves of garlic
- 1 large onion (chopped)
- 12 oz of mushrooms (sliced)
- 16 oz of fresh spinach
- 1 TBSP of balsamic vinegar
Instruction
- Cook quinoa per package directions
- Heat the oil in a large saute pan.
- Add garlic an onions and saute for about 5 minutes.
- Add the mushrooms and balsamic vinegar. Cook for about 10 minutes or until cooked down substantially.
- Then add the spinach and cover. Cook until wilted stirs often.
- Add the quinoa and toss to mix thoroughly.
- Serve hot.
