Ingredients

The following ingredients have 4 Servings
  • 1 cup of quinoa (cooked per package)
  • 2 TBSP of coconut oil or olive oil
  • 4 cloves of garlic
  • 1 large onion (chopped)
  • 12 oz of mushrooms (sliced)
  • 16 oz of fresh spinach
  • 1 TBSP of balsamic vinegar

Instruction

  • Cook quinoa per package directions
  • Heat the oil in a large saute pan.
  • Add garlic an onions and saute for about 5 minutes.
  • Add the mushrooms and balsamic vinegar. Cook for about 10 minutes or until cooked down substantially.
  • Then add the spinach and cover. Cook until wilted stirs often.
  • Add the quinoa and toss to mix thoroughly.
  • Serve hot.
