Ingredients

The following ingredients have 4 Servings
  • 1 cup raspberries
  • 1 cup blueberries
  • 1 cup sliced almonds
  • 2 cups quinoa, cooked
  • 2 cups spinach
  • 1/2 cup goat cheese, crumbled
  • 2 tbsp honey
  • 1 tsp dijon mustard
  • 3 tbsp fresh lemon juice
  • 1/2 cup olive oil
  • salt and pepper

Instruction

  • Arrange all salad ingredients in a bowl.Put all dressing ingredients in a small jar with a tight fitting lid and shake. Add salt and pepper to taste.Pour over salad and serve immediately.
