Ingredients

The following ingredients have 4 Servings
  • 8 ounces penne pasta
  • 1 Tablespoon olive oil
  • 1 (28 ounce) can diced tomatoes
  • 3 cups baby spinach
  • 1 onion (finely chopped)
  • 5 cloves garlic (minced)
  • 1 cup fresh mushrooms (sliced)
  • 4 ounces feta cheese (crumbled)
  • salt and pepper (to taste)

Instruction

  • Cook pasta according to package directions.  While pasta is cooking, heat olive oil in a skillet over medium heat.  Add onion, garlic and mushrooms and cook until tender.  Add spinach and cook until wilted.  Add tomatoes until heated through.  Add drained pasta and feta.  Add salt and pepper to taste. Warm all the way through and serve.
