Ingredients
The following ingredients have 6 Servings
- 4 flour tortillas
- 2/3 cup 1/3 less fat cream cheese
- 3/4 cup shredded sharp cheddar cheese
- 1/4 teaspoon ground cayenne pepper
- 1/2 teaspoon ancho chili powder
- 1/4 teaspoon garlic salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon allspice
- 1/4 cup minced onion
- 3 tablespoons chives, minced
- 3/4 cup bell pepper
- 1 cup diced tomatoes
- 1/4 cup minced fresh jalapeño
Instruction
- Combine the cheese and dry spices in a bowl. Mix well and set aside. Toss the chives and veggies together in another bowl. Using a sieve, gently push out any excess water from the vegetable mixture. This will keep the tortilla from getting too soggy. Spread a 1/4 of the cream cheese mixture onto a tortilla, covering the whole surface. Spread a 1/4 of the veggie mixture over the cream cheese. Roll the tortilla as tightly as you can from one edge to another. Trim the ends of the roll off. Cut the rest into 1/2 inch slices. Repeat steps 4-7 for the remaining 3 tortillas.
