Ingredients

The following ingredients have 8 Servings
  • 1 large bag of tortilla chips
  • 3 cups cheddar cheese
  • 2 cups chopped grilled chicken
  • 3/4 cup frozen corn
  • 2/3 cup black beans (drained)
  • 1/4 cup red onion (diced)
  • 1 clove garlic (minced)
  • 1 jalapeno (finely diced)
  • 1/2 cup red pepper (diced)
  • Juice of one lime
  • Salt & pepper (to taste)
  • 2 tablespoons fresh cilantro
  • 1 tablespoon oil
  • 1 cup tomato (diced)
  • 1 avocado (diced)
  • Sour Cream (for garnish)
  • Salsa (for garnish)

Instruction

  • Preheat oven to 375 degrees.
  • In a medium bowl, combine corn, black beans, onion, garlic, jalapeno, red pepper, cilantro, salt and pepper. Squeeze juice of one lime and mix in the oil. Set aside.
  • Spread a layer of tortilla chips on the bottom of a 12" cast iron skillet. Top with cheese and chicken.
  • Spread another layer of tortilla chips. Top with cheese, chicken, and corn mixture.
  • Bake in oven for 10 - 15 minutes until cheese is melted.
  • Remove from oven and top with tomatoes and avocados.
  • Serve with sour cream and salsa.
