Ingredients
The following ingredients have 8 Servings
- 1 large bag of tortilla chips
- 3 cups cheddar cheese
- 2 cups chopped grilled chicken
- 3/4 cup frozen corn
- 2/3 cup black beans (drained)
- 1/4 cup red onion (diced)
- 1 clove garlic (minced)
- 1 jalapeno (finely diced)
- 1/2 cup red pepper (diced)
- Juice of one lime
- Salt & pepper (to taste)
- 2 tablespoons fresh cilantro
- 1 tablespoon oil
- 1 cup tomato (diced)
- 1 avocado (diced)
- Sour Cream (for garnish)
- Salsa (for garnish)
Instruction
- Preheat oven to 375 degrees.
- In a medium bowl, combine corn, black beans, onion, garlic, jalapeno, red pepper, cilantro, salt and pepper. Squeeze juice of one lime and mix in the oil. Set aside.
- Spread a layer of tortilla chips on the bottom of a 12" cast iron skillet. Top with cheese and chicken.
- Spread another layer of tortilla chips. Top with cheese, chicken, and corn mixture.
- Bake in oven for 10 - 15 minutes until cheese is melted.
- Remove from oven and top with tomatoes and avocados.
- Serve with sour cream and salsa.
