Ingredients
The following ingredients have 4 Servings
- 1 3/4 cup uncooked white rice
- 3 Tbs butter
- 3 heaping Tbsp onions, (chopped small)
- 2 cloves garlic, (minced)
- 2 cups chicken broth
- 1 10 oz can Rotel®
- 1/4 tsp ground cumin
- 1/4 tsp cayenne pepper
- 1/4 tsp pepper
- 1 Tbs diced jalapeños
- 8 oz salsa verde, (I used Trader Joe's®)
Instruction
- In a large frying pan, melt butter over low flame.
- Add onions and saute for 3 minutes and then add garlic. Continue to saute for 2 more minutes.
- Pour rice into frying pan and cook until rice starts to brown, stirring often.
- Once rice starts to brown, pour chicken broth, Rotel®, salsa verde, cumin, cayenne pepper, black pepper and jalapeños.
- Stir, then cover and simmer, over low flame, for about 20 minutes or until rice is tender and liquid is absorbed.
