Ingredients
The following ingredients have 9 Servings
- 3 teaspoons lime zest
- 1 tablespoon lime juice
- 1/2 cup yellow onion (diced)
- 1/2 cup orange juice (no sugar added)
- 1/4 cup fresh cilantro (minced)
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1 teaspoon crushed red pepper
- 1 jalapeno (minced)
- 1 pound boneless pork chops (thick cut, lean, and cut into 1 inch cubes)
- 1 red bell pepper (cut into 1 inch cubes)
- 1 yellow bell pepper (cut into 1 inch cubes)
Instruction
- In a large mixing bowl combine all ingredients except the pork and bell peppers. Mix well and add the pork. Toss to coat the pork in the mixture. Cover and refrigerate for 30 minutes or up to overnight.
- Preheat grill to medium high heat or oven to 450 degrees. On skewers, place one cube of pork, followed by a cube of red pepper and a cube of yellow pepper. Repeat until the skewer is full. Again, repeat on remaining skewers until all ingredients have been used.
- Place on preheated grill (or a foil lined baking sheet in the oven) and cook for about 10 minutes, turning half way through, or until cooked completely. Serve hot, makes about 8 to 10 kebabs.
