Ingredients

The following ingredients have 4 Servings
  • 4 slices center-cut bacon
  • 1 pound lean ground beef
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon minced jalapeno peppers
  • 3 egg yolks
  • 1 teaspoon water
  • 1 half lemon, juiced
  • 6 tablespoons butter
  • 1 teaspoon sriracha sauce (or more, if you want it spicier)
  • 4 eggs
  • 4 English muffins, halved and toasted
  • Salt and pepper

Instruction

  • Cook the bacon until crispy. Place on paper towels to drain.
  • In a medium bowl, combine the beef, Worcestershire sauce, minced jalapenos and a pinch of salt and pepper. Divide the beef and form into 4 patties.
  • Add the burger patties to the pan with the bacon fat. Sear on both sides and cook through, about 5 minutes per side.
  • Place the 3 egg yolks and a teaspoon of water in a double boiler with simmering water below. (Or use a glass bowl over a small saucepan.) Whisk the yolks until thick, about 5 minutes. Off the heat, whisk in the lemon juice. Add the butter, two tablespoons at the time, until melted and thick. Add a pinch of salt and the sriracha sauce; whisk to combine.
  • Crack the 4 eggs in the same pan and fry until the whites are set, but the yolks are still runny.
  • Spread a little of the sriracha-Hollandaise sauce on the bottoms of each English muffin. Top with a burger patty, bacon, a fried egg and a good drizzle of the sriracha-Hollandaise sauce. Garnish with fresh parsley and serve immediately.
