The following ingredients have 2 Servings
  • 2 medium sweet potatoes, peeled and cut into 1-inch cubes (about 4 cups)
  • 2 tablespoons grapeseed oil or other high-heat oil
  • 1 tablespoon ground cinnamon
  • 1 tablespoon smoked paprika
  • Sea salt, to taste (I use 1/4 to 1/2 teaspoon)
  • 1 head medium cauliflower, cut into florets
  • 1 tablespoon toasted sesame oil
  • 5 scallions, thinly sliced (white and light green parts only)
  • 1 cup cherry tomatoes, quartered
  • 2 to 3 tablespoons rice wine vinegar
  • 1 to 2 tablespoons reduced-sodium tamari or soy sauce
  • 1 to 2 tablespoons chili-garlic paste or sriracha
  • 1/4 cup chopped chives
  • 1/4 cup chopped cilantro leaves
  • 1 avocado, pitted and peeled
  • 1 tablespoon fresh lime juice or to taste
  • 1 garlic clove, minced
  • Sea salt, to taste
