Ingredients

The following ingredients have 8 Servings
  • 1 pound dried black beans (rinsed and drained)
  • 1 tablespoon olive oil
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 medium jalapeno pepper (deseeded and diced)
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon cumin
  • 2 (16-ounce) cans diced tomatoes
  • 4 cups vegetable broth

Instruction

  • Add all of the ingredients to the slow cooker and set the timer for 8 hours on low. Check that the beans are tender and cook an additional 30 minutes until they reach the desired tenderness.
