Ingredients

The following ingredients have 4 Servings
  • 1 pound strewing beef, or any cut of beef, cut into bite-sized chunks
  • 4 cups beef or chicken broth
  • 1 small onion, sliced
  • 1/2 pound mushrooms, fresh, sliced
  • 1/4 cup all-purpose flour -
  • 1 can corn, canned
  • 2 pounds potatoes
  • 1 can (28 oz) canned tomatoes, diced, undrained
  • 1 tablespoon paprika -
  • 1 teaspoon salt -
  • 1 teaspoon pepper -
  • 1 teaspoon sugar -
  • oil (as needed)
  • 2 tablespoons italian seasoning or thyme, dried (more or less to taste)
  • 1-2 tablespoons our homemade hot pepper sauce, or use your favorite hot sauce
  • 1 tablespoon chili pepper flakes
  • 1 tablespoon jalapeno powder, smoked jalapeno powder, or chipotle powder 

Instruction

  • In a large skillet, with a lid, heat broth until it simmers. Add beef chunks and allow to boil until meat is tender, between 60 and 90 minutes. Once meat is almost cooked heat oil in a large pot until it shimmers or a drop of water flicked in it dances. Add mushrooms and onions and cook until tender. Add flour and stir to combine. Add canned tomatoes, potatoes , corn, paprika, salt, pepper, thyme or italian seasoning and sugar to your large pot. Add your heat choice too. Dump skillet contents into your large pot. Simmer for 30 minutes or until potatoes are fork tender and stew thickens. Serve and enjoy!
