Ingredients
The following ingredients have 8 Servings
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground allspice (plus more for garnish)
- 1/4 teaspoon cinnamon
- 1-3/4 cups milk (low-fat is okay)
- 6 tablespoons oil
- 2 large eggs (lightly beaten)
- 2 teaspoons vanilla extract
- 1/3 cup mascarpone
- 1 tablespoon milk
- 2 teaspoons vanilla extract
- 2 teaspoons sugar (or more to taste)
- 1/4 teaspoon cinnamon
Instruction
- Prepare the topping mixture first by combining the mascarpone, milk, vanilla extract, sugar and cinnamon in a small bowl until smooth. Refrigerate until ready to use.
- Heat the oven to 200°F and preheat an electric waffle iron.
- In a mixing bowl, combine the flour, sugar, baking powder, salt and ground allspice. In a separate bowl, whisk together the milk, oil, eggs and vanilla extract. Add to the dry ingredients and combine until smooth. Allow the batter to stand for 10 minutes.
- For 6-1/2-inch diameter waffles, pour 1/2 cup of batter onto the waffle plate, spreading evenly with a heat-proof spatula to within 1/4-inch of the edges. Gently close the lid and bake the waffles until crisp and golden brown.
- As they cook, transfer the waffles to a baking sheet and place them in the warm oven. Plate the waffles individually, top with a tablespoon of the mascarpone and sprinkle a bit of the ground allspice over the top. Serve with maple syrup on the side if desired.
