The following ingredients have 9 Servings
  • 270 g all-purpose flour (or type 00)
  • 150 g cold, unsalted butter
  • 3 Tbsp raw cane sugar
  • 3-4 Tbsp ice cold water
  • pinch salt
  • 1/2 pumpkin, about 1.5 kg (you will have leftovers)
  • 1 tsp cinnamon
  • 1 tsp vanilla sugar (or any other sugar)
  • 1/2 tsp allspice
  • 1/2 tsp grated nutmeg
  • 1 Tbsp maple sugar
  • 400 g pureed roasted pumpkin
  • 250 g ricotta
  • 3 Tbsp raw cane sugar (or brown sugar)
  • 1 egg, organic, free range
  • pinch salt
