Ingredients

The following ingredients have 4 Servings
  • 1000 g Pumpkin (1kg), peeled, deseeded, coarsely chopped
  • 1 tsp Fresh lemon rind finely grated
  • 0.5 tsp Ground cinnamon (large pinch)

Instruction

  • Cook pumpkin in a large saucepan of boiling water for 10-15 minutes or until tender. Drain well. Return to saucepan. Mash well.
  • Stir in lemon rind and cinnamon. Season with salt and pepper.
