Ingredients

The following ingredients have 5 Servings
  • ¾ cup + 2 tbsps whole wheat flour
  • ¼ cup + 1 tsp caster sugar
  • ¼ cup honey
  • ¼ cup oil
  • ¼ cup milk
  • ¼ tsp baking soda
  • 1 tsp baking powder
  • A pinch of salt
  • ¼ tsp grated lemon rind
  • ½ tsp dry ginger powder
  • ½ tsp dry basil leaves
  • 1 tbsp concentrated lemon juice taken from 1 big lemon
  • ¼ cup water

Instruction

  • Sieve flour, ginger powder, baking soda, baking powder and salt together for at least 2 – 3 times.
  • Mix basil and lemon rind.
  • Grease a baking tray and preheat the oven @180
  • Combine 1 tbsp lemon juice with ¼ cup water and filter this lemon juice. Set aside.
  • Take milk in a bowl and dissolve sugar. Add honey and oil. Mix well.
  • Pour this wet mixture to the dry mixture. Mix until no lumps are seen and add the diluted lemon juice.
  • Mix gently. You will see it quite frothing. Don’t overmix the cake batter.
  • Pour the cake batter into the greased tin and bake @180c for 30 - 35 minutes.
  • Allow it to cool completely and serve with honey drizzled on it or as it is.
