Ingredients

- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/2 cup all-purpose flour
- 1 1/2 cup whole wheat pastry flour
- 1 1/2 tablespoon ground ginger
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground allspice
- 1/4 teaspoon grated nutmeg
- 2 eggs
- 1/3 cup canola oil
- 1/4 cup unsweetened applesauce
- 1 cup brewed coffee, at room temperature
- 1 cup molasses
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
- 1/2 cup sugar
Instruction
- Preheat the oven to 350°F. Butter or oil a 9x5-inch loaf pan.
- In a large bowl, whisk together baking powder, baking soda, flours, ginger, cinnamon, cloves, allspice, nutmeg, salt and pepper.
- In a second large bowl, whisk together eggs, oil, sugar, applesauce, coffee and molasses.
- Pour egg mixture into flour mixture and stir just until combined.
- Transfer batter to prepared pan and bake until a toothpick inserted in the center of the loaf comes out clean, about 1 hour.
- Cool on a rack for 30 minutes before removing from the pan and slicing.
