Ingredients

The following ingredients have 13 Servings
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 cup all-purpose flour
  • 1 1/2 cup whole wheat pastry flour
  • 1 1/2 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon grated nutmeg
  • 2 eggs
  • 1/3 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 1 cup brewed coffee, at room temperature
  • 1 cup molasses
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup sugar

Instruction

  • Preheat the oven to 350°F. Butter or oil a 9x5-inch loaf pan.
  • In a large bowl, whisk together baking powder, baking soda, flours, ginger, cinnamon, cloves, allspice, nutmeg, salt and pepper.
  • In a second large bowl, whisk together eggs, oil, sugar, applesauce, coffee and molasses. 
  • Pour egg mixture into flour mixture and stir just until combined. 
  • Transfer batter to prepared pan and bake until a toothpick inserted in the center of the loaf comes out clean, about 1 hour. 
  • Cool on a rack for 30 minutes before removing from the pan and slicing.
