The following ingredients have 2 Servings
  • 1 medium sweet potato, sliced
  • 2 Tablespoons olive oil, divided
  • 2 cups cooked chickpeas or 1 15-ounces (420g) can, drained
  • 1 1/2 teaspoon curry powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper
  • 1 cup (270g) quinoa, rinsed
  • 2 cups (500ml) water
  • 1/3 cup (80 ml) olive oil
  • 2 Tablespoons balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon tahini
  • 1/2 teaspoon curry powder
  • 1 avocado, halved and sliced
  • 1 cup (100g) red cabbage, shredded
  • 1 cup (225g) raw spinach or mixed greens
  • Sesame seeds

Instruction

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Set aside.
