Ingredients

The following ingredients have 8 Servings
  • 1 California avocado (peeled, pitted & chopped)
  • 2 ounces diced green chiles (canned)
  • 1/3 cup lite coconut milk
  • 2 tablespoons water
  • 1 garlic clove (minced)
  • 1 teaspoon fresh lime juice
  • 1/4 teaspoon salt
  • 8 boneless skinless chicken thighs, (trimmed & cut into 1 1/2-inch pieces)
  • 2 teaspoons olive oil
  • 3/4 teaspoon ground cumin
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground pepper

Instruction

  • Place 8 wooden skewers in a large baking dish filled with hot water. Soak for at least 30 minutes.
