Ingredients

The following ingredients have 29 Servings
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg (ground )
  • 1/4 teaspoon cinnamon (ground )
  • pinch cloves (ground )
  • 1/4 teaspoon salt
  • 1/2 cup butter (unsalted, room temperature)
  • 3/4 cup brown sugar
  • 2 eggs (room temperature)
  • 3 tablespoons milk
  • 1 large apple (grated (I used Cortland))
  • Add-ins:1/2 cup dried cranberries or nuts or chopped dates or raisins or chocolate chips (optional)

Instruction

  • Preheat oven to 350℉/175℃. Set rack in the center of the oven.
  • Line baking sheet with parchment paper. Set aside.
  • Whisk together both flours, baking soda, spices and salt in a medium bowl. Set aside.
  • In a large mixing bowl (of stand mixer), with whisk attachment, on high speed, beat the butter with the sugar until light colored. (3-4 minutes)
  • Add eggs, one at a time and mix well. Make sure to scrape down the bowl after each addition.
  • With mixer on low speed, add half the flour mixture, followed by all the milk, followed by the other half of flour mixture. Mix until just combined.
  • Gently combine grated apple and add-in(if using).
  • With a medium sized scooper, place dough on baking sheet.
  • Bake for approximately 15 minutes.
  • Cool on wire racks.
