Ingredients

The following ingredients have 12 Servings
  • 2 ¼ cups spelt flour
  • 4 tbs. butter – softened
  • ¾ cup sugar
  • 1/3 cup sour cream
  • 2 eggs
  • 1 tsp. vanilla
  • 2 ½ tsp. baking powder
  • ½ cup milk
  • ¼ tsp. salt
  • 1 cup dried cherries – chopped
  • Zest of ½ lemon
  • Powdered sugar for dusting
  • 4 tbs. butter
  • ¼ cup all-purpose flour
  • 2 tbs. brown sugar
  • ¼ cup oats
  • ¼ tsp. cinnamon
  • ¼ cup sliced almonds
  • 2 tbs. sugar

Instruction

  • In a large bowl combine the butter, all-purpose flour, brown sugar, oats, cinnamon, sliced almonds and sugar.
  • Crumble the mixture and top each muffin evenly with the mixture. Preheat Oven 350 degrees F.
  • In a large bowl combine the spelt flour, sugar, baking powder, salt and lemon zest.
  • In a separate bowl combine the butter, milk, sour cream, eggs and vanilla and mix together with an electric mixer.
  • Pour the wet ingredients into the dry ingredients, add the chopped dried cherries and mix.
  • Prepare the muffin tins.
  • Fill the tins evenly with the batter and top each muffin with the streusel mixture.
  • Bake 15 – 18 minutes or until the toothpick test comes out clean.
  • Allow the muffins to cool and then dust with powdered sugar before serving.
