Ingredients

The following ingredients have 4 Servings
  • 1 lb lean ground beef
  • 1 Anaheim chili; seeded (, deveined, and diced)
  • 1 small or 1/2 large onion; diced
  • 2 cloves garlic; minced/grated
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1 can diced tomatoes
  • 3 cups cooked Spanish rice
  • 1/4 cup cheddar cheese plus a bit more
  • 1 can pinto beans; drained and rinsed
  • Salt/pepper to taste
  • Extra virgin olive oil; optional

Instruction

  • In a large skillet, brown the ground beef over medium-high heat.
  • When the meat is mostly cooked, drain off any large amounts of rendered fat, or add olive oil if no fat has been rendered.
  • Add the chili powder and cumin.  Mix well.
  • Add in the garlic, diced onions, and Anaheim chili pepper.  Cook for 2-3 minutes.
  • Incorporate the rice into the meat mixture.
  • Cook one minute.
  • Add the canned tomatoes with its juices and the cheese.  Mix well.
  • Add the beans, salt and pepper.
  • Gently mix everything together.
  • Cook an additional 2-3 minutes or until the beans are warmed through.
  • Dish up and serve with sprinkled cheese…possibly with some sour cream as well.
