Ingredients
The following ingredients have 4 Servings
- 1 lb lean ground beef
- 1 Anaheim chili; seeded (, deveined, and diced)
- 1 small or 1/2 large onion; diced
- 2 cloves garlic; minced/grated
- 1 tsp chili powder
- 1/2 tsp cumin
- 1 can diced tomatoes
- 3 cups cooked Spanish rice
- 1/4 cup cheddar cheese plus a bit more
- 1 can pinto beans; drained and rinsed
- Salt/pepper to taste
- Extra virgin olive oil; optional
Instruction
- In a large skillet, brown the ground beef over medium-high heat.
- When the meat is mostly cooked, drain off any large amounts of rendered fat, or add olive oil if no fat has been rendered.
- Add the chili powder and cumin. Mix well.
- Add in the garlic, diced onions, and Anaheim chili pepper. Cook for 2-3 minutes.
- Incorporate the rice into the meat mixture.
- Cook one minute.
- Add the canned tomatoes with its juices and the cheese. Mix well.
- Add the beans, salt and pepper.
- Gently mix everything together.
- Cook an additional 2-3 minutes or until the beans are warmed through.
- Dish up and serve with sprinkled cheese…possibly with some sour cream as well.
