Ingredients

The following ingredients have 4 Servings
  • 2 Tbsps olive oil
  • 1 cup Boiled potatoes (finely chopped)
  • 1.667 cups cherry tomatoes (halved)
  • 0.667 cup peas (frozen)
  • 5 eggs (lightly beaten)
  • 3 Tbsps Parmesan (grated)
  • 2 Tbsps finely chopped Basil
  • 1 Basil

Instruction

  • Heat the olive oil in a large skillet. Add the potatoes, season with salt and fry for 5 minutes until becoming brown.
  • Add the tomatoes and peas to the pan. Pour on the eggs, season with salt and ground black pepper and sprinkle over the Parmesan and basil.
  • Cook for 5 minutes until the base is firm. Cook under a preheated grill for another 3-5 minutes until the top is firm.
  • Tip out of the skillet and serve garnished with basil.
