Ingredients

The following ingredients have 8 Servings
  • 2 tbs olive oil
  • 1 brown onion finely chopped peeled
  • 2 garlic clove crushed
  • 1 cup fresh flat-leaf parsley chopped
  • 1 tsp ground cumin
  • 1 tsp dried marjoram
  • 1 tsp ground turmeric
  • 1 tsp chilli flakes
  • 810 g canned crushed tomatoes
  • 400 g canned butter beans drained rinsed
  • 1 cup red lentils dried
  • 6 cups Massel Chicken Style Liquid Stock
  • 2 chorizo sausage peeled thinly sliced
  • 1 tsp fresh flat-leaf parsley chopped *to serve

Instruction

  • In a large stock pot heat the oil.
  • Saute onion, garlic and parsley for about 5 minutes.
  • Add spices and allow to cook for another few minutes.
  • Pour in tomatoes, beans, lentils and stock. Cover and simmer for 30 minutes.
  • Add sliced chorizo sausages and simmer for another 10 minutes.
  • Check flavouring, adding ground black pepper and sea salt, if required.
  • Serve with a garnish of parsley.
