Ingredients
The following ingredients have 8 Servings
- 2 tbs olive oil
- 1 brown onion finely chopped peeled
- 2 garlic clove crushed
- 1 cup fresh flat-leaf parsley chopped
- 1 tsp ground cumin
- 1 tsp dried marjoram
- 1 tsp ground turmeric
- 1 tsp chilli flakes
- 810 g canned crushed tomatoes
- 400 g canned butter beans drained rinsed
- 1 cup red lentils dried
- 6 cups Massel Chicken Style Liquid Stock
- 2 chorizo sausage peeled thinly sliced
- 1 tsp fresh flat-leaf parsley chopped *to serve
Instruction
- In a large stock pot heat the oil.
- Saute onion, garlic and parsley for about 5 minutes.
- Add spices and allow to cook for another few minutes.
- Pour in tomatoes, beans, lentils and stock. Cover and simmer for 30 minutes.
- Add sliced chorizo sausages and simmer for another 10 minutes.
- Check flavouring, adding ground black pepper and sea salt, if required.
- Serve with a garnish of parsley.
