Ingredients

The following ingredients have 4 Servings
  • 1 chicken (approx. 1.2 kg, quartered)
  • salt
  • peppers
  • olive oil
  • 0.375 cup Red wine
  • 7 ozs Pearl onion
  • 1 yellow pepper (cut into strips)
  • 3.5 ozs black Olives (pitted if desired, drained)
  • 4 tomatoes (diced)
  • 1 tsp dried oregano
  • 1 cup vegetable stock (if needed)

Instruction

  • Heat the oven to 180°C (160°C fan ) 375°F, gas 5.
  • Season the chicken with salt and pepper and brush with olive oil. Brown on all sides in a frying pan and deglaze with the wine.
  • Place the chicken skin-side up in a baking tin and arrange the vegetables around it. Sprinkle with the oregano and season with salt and pepper.
  • Cook for about 40 minutes, basting the chicken with the sauce and adding stock as necessary. Season to taste and serve.
