The following ingredients have 4 Servings
  • 1/2 lb pancetta (finely diced (bacon or Canadian bacon may be substituted but isn't as good))
  • 1 lb spaghetti
  • 2 Tbsp olive oil and 1 Tbsp. butter
  • 4 cloves garlic (peeled and crushed)
  • 1/4 c white wine
  • 3 whole eggs
  • 4-5 Tbsp freshly grated pecorino romano
  • 1/2 c parmesan (heaping)
  • cracked black pepper
  • 2 Tbsp finely chopped fresh parsley
  • 2 cup sliced mushrooms
  • 3-4 cups fresh spinach
