The following ingredients have 4 Servings
- 1/4 cup lime juice
- 2 tablespoons red wine vinegar
- 1/3 cup extra virgin olive oil
- 4 cloves garlic (minced)
- 2 teaspoons cumin
- 1/2 teaspoon chili powder
- 1/8 teaspoon ground chipotle chili powder (or
- cayenne)
- 1/2 teaspoon sea salt
- 1/4 teaspoon fresh ground black pepper
- 4 1/2 cups cooked quinoa
- 1 1/2 cups cooked black beans (drained (1 can))
- 1/2 cup fresh or frozen corn (steam the
- corn if using fresh)
- 1/2 red onion (diced)
- 1/2 cup roasted red pepper (diced)
- 1 tablespoon minced jalapeños
- 1/4 cup cilantro
